Without the onion, there is no good cuisine – and for poor cooking it is oft the final rescue. Far beyond the bounds of our cultural sphere, scarcely a cooked dish does without the onion. Here, we are “skinning” the onion, cinematically, as we examine its botanical peculiarities, and explore its culinary use.
